Veggie Hash

What you'll need:

  1. vegetable peeler
  2. spatula
  3. griddle/skillet
  1. 2-4 carrots, peeled/shredded
  2. 1-2 handfuls fresh spinach
  3. 1 T. coconut oil
  4. salt, red pepper flakes (optional)
What you'll do:
  1. heat griddle to medium-high heat, add coconut oil
  2. saute carrots, browning if desired
  3. turn heat off, add spinach and cover to wilt
  4. ENJOY as a side to eggs or Cereal Substitution 
  5. OR top with almonds for a complete breakfast dish
